I’ve been madly going and just failing to blog, I have pictures and the recipes all typed up, but the bit about blogging it….I am failing! I am trying hard to catch up today, whilst I am a bit off colour. Will see how I go anyway.

I made this cake for a friend for their birthday. Only problem with this was that the power went off halfway through it! probably not even halfway through it even, and it never came back on! so the cake was nice and sunken…..

Flavour wise, beautiful! it was just great. I will have to give it another go sometime soon.

Cardamom Almond Cake

185g butter
¾ cup firmly packed brown sugar
2 eggs
2 cups SR Flour
2t ground cardamom
¼ cup almond meal
½ cup golden syrup
½ cup milk

Preheat oven to 180C
Beat the butter and sugar in small bowl until light and fluffy. Beat in eggs. Stir in sifted flour and cardamom and almond meal with combined syrup and milk, in two batches. Pour mixture into pan.
Bake cake for about 50 minutes. Stand in pan for 5 minutes turn onto wire rack to cool. Dust with sifted icing sugar before serving.
